Looks like your mail format is corrupt/malformed, also the from field should not be blank was this you editing it?

Any upgrades/changes to your anti-spam server recently, this is a likely cause.

Most likely the reason is the headers are malformed in that there are character returns (CR) or line feeds (lf) in the wrong place.

Some questions
a) does it happen to everyone or a single user
b) does it change if the recipient is internal/external
c) does it happen with all external recipients i.e. gmail accounts, private MS exchange, 3rd party, GroupWise
d) What you have posted is not the raw source of the email, can you post the raw source of the email from the recipent (perhaps email yourself at home).

I've attached an example of a raw source email for you to see what it should look like
