You could do that with just a post office. No need for a domain. The
advantage of having a domain on a site is when you have local
administrators there so they can connect to a domain 'nearby' instead
of having to connect over a WAN.
When you do move your post office you'll need to make some changes to
the POA file though in order to have it to listen to the right IP
address. If you move and PO and Domain you could connect to the domain,
make the IP address and UNC path changes in there and then rebuild the
post office and then start the POA (the MTA can be running while
rebuilding the PO).
