I would copy the contents of the OES 2 SP1 media to the dom0 and configure a nfs export for it. Before starting the upgrade try to mount it from the domU itself to make sure communication is okay.
Then boot from the sles 10 sp2 media and run the update and select that nfs share as a additional installation source.
By doing that you would not have to swap a disk during the installation. Sometimes that made problems. And using this solution you just need to boot with the sles dvd and access the other source across the network.
I used this method for some oes 1 full virtualized systems running in xen when I updated them to OES 2 SP1. Not with NOWS but I think it should be the same.

That's pretty much what I had expected.
I haven't done an upgrade yet and wanted a second opinion. It will be at least a few weeks before I attempt it. First, I need to gain a bit of experience with NOWS SBE 2.5 in a lab environment.
I will post my findings.
