I think if you read the specific parts of the SLES 11 documentation you should be able to see if things have changed dramatically or not. I think this should be the parts most interesting for you:

Unfortunately there seems to be no specific documentation about the mail server. What about a sles 11 test installation in a virtual system and then trying to setup your configuration ?
