Yes, you can create categories and sub-categories for the devices that are not already categorized. And you can add product names for those devices, so you have some consistancy in reporting.
Just remember that if you are going to enter that data into your database, you will need to have processes in place to manage that data effectively though change processes or it will not be reliable to report on in the future.
Monitors and printers should be captured already, but phones and cell phones would have to be added.
