All 3 primary servers point to the external Sybase server IP address.
I'm not sure if I could just reverse this process:

Yes, It should be that simple.
I don't recall the file off the top of my head, but there is a config file
on each server that points to the "Database Server".
If you have more than one server, be sure to update this file on all
servers.
The DatabaseServer itself usually uses the LoopBack address of 127.0.0.1
instead of its physical address.
